Above Eleven continues its immersive tasting journey Journey Through Nikkei with the second chapter, Integration, this October. Head Chef Erick Alonso explores how the second generation of Japanese immigrants in Peru preserved culinary tradition through invention, opening cafés and street food stalls that blended their heritage with local flavours.


The result? Dishes steeped in Japanese soul, crafted in Peruvian soil.
