Two restaurants in Singapore have just been handed three Michelin stars apiece, a first for the island nation.
Restaurants Odette and Les Amis – which both serve French haute cuisine – received full marks from the Michelin Guide, putting them at the same level as some of the best restaurants in the world.
French-born Sebastian Lepinoy of Les Amis added to the two stars he already had previously, while Chef Julien Royer – who named his restaurant after his mother – also received the highly-coveted accolade.
According to Royer, it was his grandmother who showed him, “how the most remarkable dishes can come from the purest ingredients and taught me the importance of adding that ‘little something’ to create dishes that excite the palate and fill the heart.”
There are only 133 restaurants in the world that can boast three Michelin stars. Japan tops the rankings, with 31, followed by France with 27. After that is Hong Kong and Macau, who boast ten apiece.
Singapore is more commonly known for its street food, but the entrance of Michelin in 2016 put it on the fine-dining gastronomic map.
Singapore now boasts two three Michelin star restaurants, five with two stars – Saint Pierre, Shisen Hanten, Shoukouwa, Waku Ghin and the Nordic-Asian establishment Zen – and another 37 with one star.
