Madeleines
Growing up, I would always have madeleines for my afternoon snack, and I would always dip them in milk. It’s a childhood memory that shows that I already appreciated and valued the simplest flavours. Even now, those flavours remind me of the joy found in life’s little pleasures.
Cherry at NAHATÉ Dubai
Black Forest is my signature dessert. It was the first truly difficult cake that I made as a young assistant—and I have gone on to perfect it, so it has followed me around the world for the last 10 years. It was also the hero dish star of my film, Sugar and Stars. At NAHATÉ Dubai I give it a special twist making it with a biscuit base brownie, caramel and chocolate mousse. You have to come try it.
Yougurt Cake
The yogurt cake is a dessert that is particularly dear to me. It’s the one that first made me fall in love with baking. It marks the beginning and the birth of a passion that has inspired my career. I remember it was the thing that I made that got the most compliments from my friends and family—particularly how much I enjoyed eating the raw batter!
Mustard Salmon
When I dive into my nostalgia, this dish always takes me back to Sundays spent with my family. I can still taste the mustard salmon that my aunt used to make for everyone when they were gathered around the table. It’s a comforting dish that takes me back to those moments of pure joy when sharing brought us together.
King Crab Pinzette
There is a real elegance and beauty when it comes to pastry—even savoury ones. At NAHATÉ Dubai there’s an avocado and king crab tart that we make which is simple and also incredibly healthy. It’s so light and addictive, the kind of dish that leaves you feeling satisfied yet craving more with every bite. I could easily eat three whole ones.
