Black Forest is my signature dessert. It was the first truly difficult cake that I made as a young assistant—and I have gone on to perfect it, so it has followed me around the world for the last 10 years. It was also the hero dish star of my film, Sugar and Stars. At NAHATÉ Dubai I give it a special twist making it with a biscuit base brownie, caramel and chocolate mousse. You have to come try it.

I remember it was the thing that I made that got the most compliments from my friends and family—particularly how much I enjoyed eating the raw batter!

It’s so light and addictive, the kind of dish that leaves you feeling satisfied yet craving more with every bite. I could easily eat three whole ones.
