Creatively, putting your name to something is the ultimate test. You are essentially opening yourself up for the world to pass judgement on your creativity, not only hoping that they like what you’ve done, but that they understand it too.
I remember the first time I was truly proud to put my name to a dish, it was called Pita Surprise. I was fascinated by the pitas that had been freshly made in a few places in Deira. I was then wondering how can I make them smaller, a lot crispier and fill them with something warm, but not too hot. A modern take on something so simple and integral to the culture of the Middle East, the key factor I wanted was for it to be a talking point for the people eating it.
Originally, I launched it when working at Play Restaurant, but it was such a success that I have now evolved it into the Wagyu Beef Pillow, which I serve on the menu at Billionaire Mansion Dubai. It continues to be a bestseller.”
