When famed chef and restauranteurs the Galvin brothers sought to expand into the Middle East, they needed someone incredibly capable to run the restaurant that bears their name.
Fortunately, they chose the immensely talented Luigi Vespero, a chef who has not simply upheld the reputation of the family brand, but catapulted the restaurant to even loftier heights. The Neopolitan chef worked with the Galvin brothers for a number of years, first working for Galvin La Chapelle in London, before moving over to head up Galvin Bistrot Deluxe.
Galvin Dubai opened its doors under Vespero’s guidance a year ago, and instantly made a name for itself by serving dishes that hail from the best of Britain (but served with customary French flair).
Vespero’s Italian heritage is — quite happily — all over the menu, with little touches of Italian panache appearing on most dishes. What’s more, Galvin Dubai has become one of just a few restaurants choosing to really embrace local ingredients; Vespero himself went to inspect the Middle East’s first shellfish farm producing gourmet oysters, before transforming them into one of the restaurant’s most celebrated dishes.
